Ingredients:
4 cups sliced carrot (about 1 pound) |
1 tablespoon dark brown sugar |
3 tablespoons apricot preserves |
1 tablespoon reduced-calorie margarine |
1/2 teaspoon salt |
1/8 teaspoon ground pepper |
Directions:
1. Arrange carrot in a steamer basket over boiling water. Cover; steam 15 to 20 minutes or until tender. Transfer carrot to a bowl; add brown sugar and remaining ingredients, tossing gently until preserves and margarine melt and carrot is glazed. |
