Ingredients:
3 cups peeled and mashed apricots
1/4 cup triple sec or other orange-flavored liqueur
1 cup whipping cream
2 tablespoons sugar
grated rind of 1 lemon
1/2 (1-ounce) square semisweet chocolate
Directions:
1. Combine apricots and liqueur in a large mixing bowl; stir well.
2. Beat 1 cup whipping cream in a small mixing bowl until foamy; gradually add sugar, beating until soft peaks form. Fold sweetened whipped cream and lemon rind into apricot mixture.
3. Spoon apricot mixture into 6 stemmed dessert glasses. Lightly grate chocolate over top of each serving. Chill thoroughly.
