Ingredients:
3 cups peeled and mashed apricots |
1/4 cup triple sec or other orange-flavored liqueur |
1 cup whipping cream |
2 tablespoons sugar |
grated rind of 1 lemon |
1/2 (1-ounce) square semisweet chocolate |
Directions:
1. Combine apricots and liqueur in a large mixing bowl; stir well. 2. Beat 1 cup whipping cream in a small mixing bowl until foamy; gradually add sugar, beating until soft peaks form. Fold sweetened whipped cream and lemon rind into apricot mixture. 3. Spoon apricot mixture into 6 stemmed dessert glasses. Lightly grate chocolate over top of each serving. Chill thoroughly. |
