Apricot Cream Cheese Strata |

Stratas are often made iwth savoury ingredients such as sausages and herbs, but this recipe is fun to try as a sweet version. The results are fabulous!! Ingredients:
4 large eggs, beaten |
2 cups milk |
1/4 teaspoon ground ginger |
1 teaspoon ground cinnamon |
1 tablespoon maple syrup |
1 loaf raisin bread, cubed |
6 ounces cream cheese, cubed |
3/4 cup smucker's pure apricot jam, divided |
2 tablespoons almonds, sliced |
Directions:
1. Grease an 8-inch square baking pan. Combine eggs, milk, ginger, cinnamon, and maple syrup in small bowl. Set aside. 2. Meanwhile, place 1/3 of breadcubes in bottom of prepared pan. Dot with half of cream cheese cubes, and 1/4 cup of Apricot Jam. 3. Repeat layers, ending with bread cubes, reserving 1/4 cup of jam. 4. Pour egg mixture over top and gently press bread mixture down. Cover and refrigerate 1-24 hours. 5. When ready to bake, drop remaining jam over top and sprinkle with almonds. Bake at 350F for 1 hour or until puffy and golden. |
