We made this several years ago for Thanksgiving instead of the yucky stuff from a can - prepared the day ahead and chilled in the refrigerator it thickens nicely and is so lovely and garnet-colored - and the flavor is delicious and refreshing - Maribeth and I thought we'd share it with you all! Ingredients:
2 cups water |
2 cups sugar |
4 cups fresh cranberries |
1 cup dried apricot, chopped |
1 orange, zest of |
Directions:
1. Boil the water and sugar together for 5 minutes. Add the cranberries and chopped apricots. Simmer until cranberry skins burst, about 6 - 8 minutes. Stir in orange zest and cool. |
