This recipe is from Ken Kostick's 3 Easy Steps to Great Meals and is my favourite cranberry sauce to serve at Christmas. I leave it chunky, but Ken notes in his cookbook that you can puree it for a few minutes if you prefer a smooth sauce. Ingredients:
2 cups dried cranberries |
1/2 cup chopped dried apricot |
1/2 cup raisins |
3/4 teaspoon ground cinnamon |
1/4 teaspoon allspice |
1/4 teaspoon ground ginger |
1 pinch ground cloves |
5 1/2 cups water |
3/4 cup sugar |
1/2 cup cider vinegar |
Directions:
1. In a large bowl, combine the cranberries, apricots, raisins and spices. Mix well, then set aside. 2. Combine the water and sugar in the saucepan. Bring to a boil and reduce the heat to medium. Cook, stirring constantly, until the sugar is completely dissolved. 3. Add the dried fruit mixture and vinegar. Bring the mixture to a boil and reduce the heat. Simmer the sauce for 10 minutes or until the fruit is tender. 4. Let sauce cool and serve. |
