From EatingWell's Garam Masala Lamb Chops with Apricot Couscous recipe. **Ingredients: water kosher salt whole-wheat couscous dried apricots golden raisins pine nuts, fresh mint lemon juice extra-virgin olive oil cvt Ingredients:
1 1/4 c water |
1/2 tsp. kosher salt |
3/4 c whole-wheat couscous (see ingredient note) |
1/4 c chopped dried apricots |
1/4 c golden raisins |
2 tbsp pine nuts, toasted if desired |
1/4 c sliced fresh mint |
1/4 c lemon juice |
2 tsp extra-virgin olive oil |
Directions:
1. Bring water and 1/2 teaspoon salt to a boil in a small saucepan. Stir couscous, apricots and raisins into the boiling water. Return to a boil, reduce heat to a low simmer, cover and cook for 2 minutes. Remove from the heat and let stand, covered, for 5 minutes. Stir in pine nuts, mint, lemon juice and the oil. |
