This is a very nice and refreshing dish that is great at breakfast, brunch or as a dessert. Enjoy Ingredients:
1 pound fresh apricots sliced 1/4-inch thick |
1 cup half and half |
2 large eggs |
3 tablespoons cognac |
1/3 cup granulated sugar |
1/2 cup all-purpose flour less 1 tablespoon |
1/2 teaspoon freshly-grated nutmeg |
sifted confectioners' sugar for dusting |
Directions:
1. Preheat oven to 350. 2. Butter a shallow baking dish and arrange apricots over the bottom. 3. In a blender or food processor combine the half and half, eggs, cognac and sugar. 4. Add flour and blend until smooth then pour mixture over the apricots. 5. Grate nutmeg over the custard and bake in the center of the oven for 35 minute. 6. Cool for 5 minutes then sprinkle heavily with confectioners' sugar and serve. |
