A tasty bread in the shape of a ring to enjoy anytime Ingredients:
1/3 cup butter - diced |
4 cups self-rising flour - sifted |
4 tblspns super-fine sugar |
2 eggs - beaten |
2/3 cup milk |
filling & decoration |
2 tblspns butter - melted |
2/3 cup dried aprocots - chopped |
3 1/2 ozs semi-sweet chocolate chips |
1 - 2 tblspns milk - to glaze |
1 oz dark or semi-sweet chocolate - melted |
Directions:
1. Pre-heat oven to 350 degrees 2. Grease a 10 round cake pan & line with wax paper 3. Rub the butter into the flour until the mixture resembles fine bread crumbs 4. Stir in the sugar, eggs & milk to form a soft dough 5. Roll out the dough on a lightly floured surface to form a 14 square 6. Brush the melted butter over the surface of the dough 7. Mix together the apricots & the chocolate chips & spread them over the the dough to within 1 of the top & bottom 8. Roll up the dough tightly, like a jelly roll & cut it into 1 slices 9. Lay the slices around the edge of the pan, overlapping slightly 10. Brush with a little milk 11. Bake for about 30 mins, or until cooked & lightly golden 12. Cool the cake in the pan for about 15 mins & then carefully transfer to a wire rack to cool 13. Drizzle the melted chocolate over the ring to decorate. 14. NOTE:- Best served the same day it is made. It is wonderful served warm. 15. Golden raisins can be used instead of the chocolate chips |
