APRICOT CHICKEN SALAD I obtained this recipe from an estate sale when I purchased the family collection from the Rush Estate in Irving, Texas in 1992. Ingredients:
1/2 cup plain yogurt |
1/4 cup mayonnaise |
3 tablespoons apricot preserves |
2 teaspoons grated fresh gingerroot |
1/2 teaspoon salt |
1/2 teaspoon pepper |
3 cups cooked chicken |
1 cup sliced almonds toasted |
6 ounce package dried apricots chopped |
3/4 cup sliced celery |
lettuce leaves |
Directions:
1. Whisk together yogurt, mayonnaise, apricot preserves, gingerroot, salt and pepper. 2. Add chicken, almonds, apricots and celery then chill and serve on lettuce leaves. |
