Of all my mom's recipes (well, maybe of all her chicken recipes), this would have to be one of my favorites. I know it's a cliche, but this is so easy yet sooo scrumptious! Ingredients:
1 (12 ounce) jar apricot jam |
1 (8 ounce) bottle french dressing |
1 (1 1/4 ounce) package dry onion soup mix |
4 -6 bone-in skinless chicken breasts or 1 -2 lb of mixed skinless chicken piece |
Directions:
1. In a small bowl, combine the preserves, dressing and soup mix. Place the chicken in a large baking dish or roasting pan. Pour the sauce over the chicken. 2. Bake for 1 hour, basting every 15 minutes until a meat thermometer inserted into the chicken registers 170°F and the juices run clear. (If you don't have a meat thermometer, look for the juices to be clear. If they are, the chicken is done.). |
