Apricot Chicken

This is an old standby recipe. quick and easy
Ingredients:
6 boneless skinless chicken breast halves
2 tablespoons vegetable oil
1/2 cup apricot preserves
3/4 cup chicken broth
1 tablespoon dijon mustard
1/4 cup apricot brandy
salt and pepper
Directions:
1. Season chicken breast with salt and pepper.
2. Heat oil in large skillet.
3. Brown chicken on both sides.
4. Add broth.
5. Cover simmer 30 minute until chicken is fork tender.
6. Remove chicken to platter.
7. Cover with foil to keep warm.
8. Blend in remaining ingredient to remaining liquid in skillet.
9. Return breast to skillet.
10. Simmer 5 minutes to coat chicken well.
