Motts easy to bake, easy to make, cards. Ingredients:
1 3/4 cups flour |
1 teaspoon baking powder |
1/4 teaspoon baking soda |
1/4 teaspoon salt |
1/2 cup sugar |
1/3 cup apricot, dried, minced |
1/2 cup carrot, shredded |
1/2 cup applesauce |
1 egg |
2 tablespoons oil |
1/2 cup powdered sugar |
2 teaspoons apple juice |
Directions:
1. Preheat oven 350 degrees Fahrenheit. 2. Spray an 8 x 4 inch pan with non stick cooking spray. 3. Combine flour, baking powder, baking soda, salt, and sugar. 4. Add apricots. 5. Add carrots, applesauce, egg, and oil; stir until just combined; will be thick. 6. Pour into baking pan. 7. Bake 45 to 50 minutes. 8. Cool overnight. 9. Next day combine powdered sugar and apple juice for the glaze; pour over top. |
