This was a friend's recipe from a recipe exchange party. Yummy! Ingredients:
1 (8 ounce) package cream cheese |
1 cup blue cheese, crumbles |
1 lb dried apricot (unsulfured, they are brown) |
1 cup pistachios, crushed |
Directions:
1. Mash together the cream cheese and blue cheese crumbles with a fork. Roll into small marble sized balls and refrigerate for 10-30 minutes. 2. Split open each apricot so it looks like a clam. Stuff with a cheese ball and sprinkle pistachios on exposed cheese. |
