Just made this up today with what I had on hand and both my toddler and I loved it. A yogurt based smoothie that is quite tasty. The flaxmeal is not a MUST, but does increase the health factor and it tastes great in this smoothie (feel free to increase it to 2 T if you like). Ingredients:
1/4 cup sliced strawberry (frozen if you like) |
5 apricot halves (from a can or tin with juice reserved) |
3/4 cup nonfat vanilla yogurt |
1 tablespoon apricot nectar (reserved from the can) |
1 tablespoon flax seed meal |
1/4 cup cold water |
Directions:
1. Place first 5 ingredients in blender and mix well. Add water til you get the desired consistency. Taste and add a bit more apricot nectar if it's not sweet enough for you! |
