for 16 bars you will need |
1/2 cup sweet butter |
1/2 cup sugar |
1 tsp.grated lemon peel |
2 eggs |
1/2 cup (each) unbleached flour & whole wheat flour |
1/2 tsp. salt |
1/4 tsp. baking soda |
4 freas apricots (diced) |
1/4 cup br. sugar |
1/2 cup toasted coconut |
2 tbsp. sweet butter |
Directions:
1. Cream together the 1/2 cup butter,sugar& rind until light & creamy 2. Beat in eggs , one a a time 3. In a separate bowl combine flours, salt, & baking soda 4. Stir into creamed mixture. Add apricots 5. Spread mixture into a lightly buttered 9x9 pan. Combine 6. the 1/4 cup br. sugar & coconut in a bowl. 7. Cut the 2 TBSP. butter into the mixture until crumbly. 8. Sprinkle over batter 9. Bake 350 for thirty min. until lightly browned & firm 10. cool. 11. Cut into 16 bars 12. Good served with: Iced tea swizzled with 13. a long stick of fresh pineapple. |
