I got this recipe from my sisters MIL. I love the sweet tangy flavor from the apricots paired with the coconuts and nuts. They are wonderful and keep great in an airtight container. They freeze well to. Ingredients:
3/4 cup margarine |
1 cup sugar |
1 egg |
1/2 cup walnuts, chopped |
2 cups flour |
1/4 teaspoon baking powder |
1 1/3 cups coconut |
1/2 teaspoon vanilla |
1 pint apricot jam |
Directions:
1. Mix margarine and sugar. 2. Add eggs and mix in dry ingredients. 3. Finally mix in coconut, nuts, and vanilla. 4. Grease a 9 by 13 pan. 5. Spread 2/3 of mixture in bottom of pan pressing down evenly. 6. Spread jam on top and crumble remaining mixture on top. 7. Bake at 350° for 35 minutes. |
