1 tablespoon baking powder |
1/8 teaspoon salt |
heaping 1/2 cup superfine sugar |
1/3 cup plumped dried apricots, finely chopped |
2 bananas |
about 2/3 cups of milk |
2 large eggs |
6 tablespoons of sunflower oil or melted cooled butter |
Directions:
1. 1. Preheat the oven to 400 F/200C. 2. 2. Grease a 12 cup muffin pan or use paper liners. 3. 3. Sift together the flour, baking powder and salt. 4. 4. Then stir in the sugar and dried apricots. 5. 5. Mash the bananas and put in a bowl. Make up the puree to 1 cup with milk. 6. 6. Lightly beat the eggs in a bowl and then add the banana and milk mixture and the oil. 7. 7. Add the wet ingredients to the dry ingredients and store gently until just combined. 8. 8.
