This is from the 2003 Chrisco calender. I can't wait to try them. Ingredients:
200 g dried apricots, chopped |
1/2 cup orange juice |
1/4 teaspoon citric acid |
1/2 cup icing sugar |
1 cup coconut |
1 cup fine plain sweet biscuit crumbs |
1/2 cup melted chocolate |
Directions:
1. Put apricots, orange juice and citric acid into a saucepan. Cover and bring to the boil. Reduce heat and simmer for 10 minutes. Leave to cool. 2. Puree apricot mixture in a food processor or blender. Transfer to a bowl. 3. Add icing sugar, coconut and biscuit crumbs. Mix well. 4. Measure tablespoons of mixture and roll into balls. 5. Dip in melted chocolate. Chill until set. |
