From Flo Bjelke-Peterson's Classic Country Cooking book. I chop my almonds in the food processor to get the texture that works best for these. You can also use peanuts if you prefer. Ingredients:
1 cup dried apricot, chopped |
1/2 cup orange juice |
4 tablespoons honey |
1 cup powdered milk |
3/4 cup almonds, chopped |
1/2 cup desiccated coconut |
Directions:
1. Simmer apricots, juice, and honey for 10 minutes. 2. Add milk powder and nuts to mixture. Stir and cool. 3. Roll into balls and coat with coconut. Store in fridge. |
