This is an incredible rice recipe bursting with great fruit and nut flavors. I like to serve this with grilled chicken and/or grilled pork chops. Enjoy
Ingredients:
1/3 cup white onions chopped
1/3 cup celery chopped
1 tablespoon butter
2 cups cooked brown rice
2/3 cup walnuts coarsely chopped
2/3 cup dried apricots coarsely chopped
3 tablespoons pine nuts toasted
3 tablespoons seedless raisins plumped
1 tablespoon snipped fresh parsley
1/2 teaspoon thyme
1/4 teaspoon ground sage
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup chicken broth
Directions:
1. Cook onion and celery in butter in small skillet over medium heat until tender.
2. Combine all ingredients in large bowl then turn into greased baking dish.
3. Cover with foil and bake at 350 for 25 minutes.
