Apricot and Pistachio Cous Cous

Quick and versatile side dish and delicious!
Ingredients:
3/4 cup couscous
1/2 cup water
1/2 cup orange juice
7 dried apricots, chopped
1/4 cup pistachios
1/4 cup feta (or more)
4 basil leaves, chopped
1 teaspoon butter
salt and pepper
Directions:
1. Combine water, orange juice, and butter in a medium sauce pan over medium high heat.
2. Bring just to a boil and stir in cous cous. Cover and remove from heat.
3. Let stand 5 minutes, until liquid is absorbed. Fluff with a fork.
4. Add chopped apricots. pistachios, feta, basil and salt and pepper.
