Apricot and Pistachio Cous Cous |

Quick and versatile side dish and delicious! Ingredients:
3/4 cup couscous |
1/2 cup water |
1/2 cup orange juice |
7 dried apricots, chopped |
1/4 cup pistachios |
1/4 cup feta (or more) |
4 basil leaves, chopped |
1 teaspoon butter |
salt and pepper |
Directions:
1. Combine water, orange juice, and butter in a medium sauce pan over medium high heat. 2. Bring just to a boil and stir in cous cous. Cover and remove from heat. 3. Let stand 5 minutes, until liquid is absorbed. Fluff with a fork. 4. Add chopped apricots. pistachios, feta, basil and salt and pepper. |
