Apricot and Mint Fish

White fish fillets with apricot and mint sauce.
Ingredients:
6 white fish fillets
1 (425 g) can apricot nectar
1 (30 g) packet french onion soup mix
1 tablespoon lemon juice
2 tablespoons fresh mint, chopped
Directions:
1. Place fish in baking dish in single layer.
2. Combine remaining ingredients in bowl, pour over fish.
3. Cover, marinate for 1 hour.
4. Preheat oven to 180C (350F).
5. Bake in oven for about 45 minutes or until fish is tender.
