Apricot and Lime Chutney/Relish

i have an over excited fruit tree out the back and i made this up. quite tasty
Ingredients:
5 kg apricots
500 g raw sugar
1 red onion (sliced)
2 garlic cloves (chopped)
1 tomato (diced)
200 ml lime juice
1 red capsicum (seeded and diced)
salt
pepper
Directions:
1. Score the apricot skin and soak in boiling water (to remove skin).
2. remove skin.
3. remove seeds.
4. place in a pot with sugar.
5. slice onion and place in pot.
6. bring to boil.
7. add all remaining ingredients.
8. season to taste.
9. reduce till very thick and syrupy (slow simmer).
10. for a perfect consistency i blended this- you could leave it chunkier if you wanted to.
