Apricot and Coconut Balls |

These balls could also be dipped in white or dark chocolate for a special occasion. Ingredients:
3/4 cup all-bran cereal |
1/2 cup hot water |
1 cup dried apricot |
1/3-2/3 cup skim sweetened condensed milk |
3/4 cup desiccated coconut, for rolling |
Directions:
1. Place bran cereal in bowl, pour over hot water. 2. Set aside for 5 minutes then place in food processor. 3. Add apricots and sweetened condensed milk. 4. Process till well combined - about a minute. 5. Mixture should be reasonably firm. 6. Roll into balls, roll in coconut. 7. Refrigerate balls for 2 hours in fridge. |
