APRICOT ALMOND CREAM FRENCH TOAST This recipe came from an estate sale. I obtained it when I purchased the family collection from the Almond Estate in Grand Prairie, Texas in 1992. Ingredients:
3 eggs |
3 tablespoons apricot preserves |
1 tablespoon peach brandy |
3/4 cup half and half |
6 slices french bread cut 1/2 thick |
butter for frying |
4 fresh apricots peeled and sliced |
powdered sugar, toasted almonds and mint sprigs for garnish |

1/3 cup apricot preserves |
4 tablespoons butter softened |
Directions:
1. In small bowl beat eggs, preserves and brandy then beat in half and half. 2. Place bread slices in baking dish and pour egg mixture over top. 3. Cover and refrigerate overnight then melt butter in large skillet. 4. Cook bread slices over medium heat until browned turning once. 5. Beat preserves and butter until light and fluffy then put on bread slices. 6. Sprinkle with powdered sugar then garnish with apricot slices, toasted almonds and mint sprig. |
