This chicken and rice dish is delicious and packed with protein and vitamins Ingredients:
2 1/4 cups chicken broth |
1 cup long grain brown rice |
1 small onion, chopped |
1/4 cup green pepper, chopped |
1/4 cup red pepper, chopped |
1 tsp salt |
1/4 tsp thyme |
1/4 tsp marjoram |
1 lb chicken breast |
4 tbsp apricot preserves |
1/3 cup sliced almonds, toasted |
Directions:
1. Combine first eight ingredients in a greased baking dish; mix well. Top with chicken. 2. Cover and bake at 350 for 55-60 minutes or until rice is tender. Uncover and stir the rice. Place 1 tbsp of preserves on each chicken breast. Bake 5 minutes longer. Sprinkle with almonds. Bake 5 minutes more. |
