A healthy, fat free recipe with a true hearty, homemade smell that says Good for you. The combination of an orange fruit, and orange vegetable, whole wheat flour, and a light, satisfying taste will work great for a breakfast or snack.
Ingredients:
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup brown sugar
1/4 cup orange juice
1 tablespoon orange juice
2 egg whites
1 teaspoon almond extract
1 1/4 cups grated carrots
1/3 cup dried apricot, chopped
1/3 cup chopped walnuts (optional)
Directions:
1. Combine flour, baking powder, baking soda, and brown sugar in large bowl. Stir to mix well. Add both 1/4 cup and 1 tablespoons orange juice, egg whites, and almond extract, stir until moistened. Fold in carrots, apricots, and walnuts (if you choose to use walnuts).
2. Evenly spread in greased loaf pan. Bake at 350 F for about 45 minutes or until toothpick inserted in center comes out clean. During baking, bread might form some opening crevices, allow for some heat ventilation inside bread. Cool completely.
3. Serve with a spread of peanut butter for some protein.
