Applesauce Spice Cupcakes |

I began making these moist Applesauce Spice Cupcakes in grade school and still bake them today. Ingredients:
1/3 cup butter, softened |
3/4 cup sugar |
2 eggs |
1 teaspoon vanilla extract |
1-1/3 cups king arthur unbleached all-purpose flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
1/8 teaspoon ground cloves |
3/4 cup applesauce |
cream cheese frosting |
Directions:
1. In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine dry ingredients; add to creamed mixture alternately with applesauce. 2. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 25 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to a wire rack. Frost cooled cupcakes. Yield: 1 dozen. |
