Applesauce-oatmeal Muffins |

A light moist breakfast muffin. Ingredients:
2 c all-purpose flour |
1 c sugar (can be reduced to 3/4 c) |
4 tsp. baking powder |
1 1/2 tsp. salt |
1 1/2 tsp. cinnamon |
1/2 tsp. nutmeg |
pinch of cloves |
2 c applesauce |
1/2 c butter or margarine, melted |
3 large eggs |
1 1/2 c plus 2 tbl. oats |
1 c raisins |
Directions:
1. Preheat oven to 375 degrees. 2. Grease eighteen 2 1/2-inch muffin-pan cups. 3. Combine flour, sugar, baking powder, salt, cinnamon, nutmeg and cloves in large bowl; stir into dry ingredients until moistened. Stir in 1 1/2 cups oats and the raisins. 4. Spoon batter into prepared muffin cups. 5. Sprinkle tops with remaining oats. 6. Bake 20 to 25 minutes, until toothpick inserted in center comes out clean. 7. Remove from pans. |
