Applesauce Oat Muffins for 2 |

When trying a new recipe, making up a whole batch of muffins & then not really caring for the flavor or texture or both is pretty annoying. Here's a little quickie I picked up that only makes 4 muffins; healthy ones to boot. Almost like a try before you buy deal. Ingredients:
1/2 cup all-purpose flour |
1/4 cup quick-cooking oats |
3 tablespoons brown sugar |
1 teaspoon baking powder |
1/4 teaspoon ground cinnamon |
1/8 teaspoon salt |
1 egg |
1/4 cup milk |
2 tablespoons unsweetened applesauce |
1 tablespoon oil |
Directions:
1. Preheat oven to 400ºF. Coat 4 regular size muffin cups with cooking spray. 2. Combine flour, oats, brown sugar, baking powder, cinnamon & salt. 3. In another bowl, mix the egg, milk, applesauce & oil. Stir into dry ingredients just until moistened. Don't over mix or the mufins will toughen up. 4. Fill prepared muffin tins 2/3 full. 5. Bake for 12-15 minutes or until a toothpick comes out clean. 6. Cool for 5 minutes in pan. Remove to rack. 7. Serve warm. |
