My Aunt Millie was another great cook, and these muffins were one of my favorites of her recipes. Ingredients:
1/2 cup butter |
1/2 cup sugar |
2 eggs |
3/4 cup applesauce |
1 3/4 cups flour |
1 tablespoon baking soda |
1/2 teaspoon salt |
1/4 cup butter, melted |
1/4 cup sugar |
1/8 teaspoon cinnamon |
Directions:
1. Cream butter and sugar, beating until light and fluffy. 2. Add eggs, one at a time, blending well. 3. Stir in applesauce. 4. Combine dry ingredients and stir into applesauce mixture just to moisten. 5. Spoon batter into lightly-greased muffin tins, filling 2/3 full. 6. Bake at 425 degrees for 15 minutes. 7. Remove from pan immediately and dip tops in melted butter. 8. Combine sugar and cinnamon and sprinkle over muffins. |
