Shared on a recipe newsgroup, I have made this easy and delicious cake, flavor improves with age. A great holiday cake too. One can alter the variety of nuts and fruits. I often add glazed grapes atop the cake for a special presentation Ingredients:
2 cups sugar |
1 cup shortening |
3 cups unsweetened applesauce |
4 tsp. cinnamon |
1 tsp. cloves |
1 tsp. nutmeg |
4 tsp. allspice |
1 tbsp jam of any fruit jam or preserves |
4 cups flour |
1/2 tsp. salt |
2 tsp. soda |
2 eggs |
1/2 lb. candied pineapple |
1/2 lb. candied cherries |
1 lb. candied mixed fruits |
1 lb. chopped dates |
1 cup raisins |
2 cups chopped walnuts |
Directions:
1. Combine all ingredients except fruits and nuts and mix until smooth. 2. Stir in fruits and nuts. 3. Line the bottom of two 9 x 5 x 3 loaf pans or one 10 x 4 tube pan with well-greased and floured double-thickness parchment paper. 4. Bake at 300 degrees F. for one hour or l test for doneness with a toothpick) 5. Cool in pan 15 minutes 6. Carefully remove to cool completely. 7. Wrap in foil and let mellow overnight. 8. May be frozen if desired. |
