Applesauce Fruit And Nut Loaves |

Another of my mini loaf recipes which can be changed from applesauce to pumpkin!! Ingredients:
bowl one |
2 cups thick applesauce or 2 cups canned plain pumpkin |
2 cups sugar |
1 cup oil |
4 eggs |
1 tsp vanilla butternut flavor ( or almond or vanila ) |
bowl two |
3 cups flour |
1 tsp salt |
1 tsp baking soda |
1 tsp baking powder |
1 tsp apple pie spice or |
1 tsp pumpkin pie spice |
fruit and nut mix |
1/2 cup chopped hazelnuts |
1/2 cup chopped pecans |
1/2 cup dried cranberries |
1/2 cup golden raisins |
1/2 cup dark raisins |
Directions:
1. Mix well bowl one, Mix well bowl two, 2. Mix both together to blend well. 3. Stir in fruits and nuts 4. Divide batter into 6 mini loaves ( greased and floured ) 5. or 2 larger loaf pans 6. Bake in a 350 F oven 25 to20 minutes or golden and tested done. 7. Remove from pans after 5 to 10 minutes, cool on rack 8. When cold wrap in foil to mellow overnight 9. Freeze if desired ! |
