Applesauce Filbert Silver Dollar Pancakes |

Cook on lower heat because these burn fairly easily. They don't make good bigger pancakes; keep them small. I got the idea, which I tweaked, from Apple Kitchen Cook Book, Demetria Taylor. Ingredients:
2 cups self rising flour |
1 teaspoon baking soda |
2 tablespoons sugar |
1 teaspoon vanilla |
2 eggs |
2 cups buttermilk |
1 cup applesauce |
4 tablespoons butter, melted |
1/4 hazelnuts, ground coarse |
Directions:
1. Mix flour, baking soda, sguar, vanilla, eggs, buttermilk, applesauce, melted butter and ground hazelnuts all together. 2. Cook silver-dollar-size pancakes on a well greased (Pam) pan on lower heat. |
