This recipe is from Mrs. Selma Hiller, from the cookbook Heritage of Cooking A Collection of Recipes from East Perry County, Missouri. Ingredients:
1 cup sugar |
2 eggs |
1 cup raisins |
1/4 teaspoon clove |
1/4 teaspoon nutmeg |
1/2 cup butter |
2 cups flour |
1 teaspoon cinnamon |
1/4 teaspoon allspice |
1 teaspoon vanilla |
1 cup applesauce |
1 teaspoon baking soda |
1/4 teaspoon salt |
nuts, if desired |
Directions:
1. Mix the first ten ingredients together. 2. Mix salt and soda in applesauce just before adding to batter. 3. Mix well. 4. Bake in a moderate oven until an inserted cake tester comes out clean. 5. (I'm guessing 375 degrees for maybe 35 minutes. This is only a guess since the recipe does not state time and temp). |
