Ingredients:
2 1/2 cups all-purpose flour |
1/4 cup sugar |
1/4 cup measures-like-sugar calorie-free sweetener |
1 1/2 teaspoons baking soda |
1/2 teaspoon salt |
2 cups nonfat buttermilk |
1/4 cup fat-free milk |
1/2 cup egg substitute |
1/2 cup unsweetened applesauce |
3 cups unprocessed wheat bran |
cooking spray |
Directions:
1. Preheat oven to 400°. 2. Combine first 5 ingredients in a large bowl. Make a well in center of mixture, and set aside. Combine buttermilk and next 3 ingredients, stirring well with a wire whisk. Stir in bran; let stand 5 minutes. 3. Add bran mixture to flour mixture, stirring just until dry ingredients are moistened. 4. Spoon batter evenly into 24 muffin cups coated with cooking spray, filling three-fourths full. Bake at 400° for 22 to 24 minutes or until golden. Remove muffins from pans immediately, and cool on wire racks. |
