Low Fat recipe. I add glace cherries, fruit peel, chocolate chips or M&M's to this recipe. If I'm wanting more fiber I substitute 1/2 of the flour with 1 cup whole wheat flour. Use very ripe bananas. Ingredients:
4 bananas |
1 cup sugar |
1/2 cup applesauce |
1 teaspoon vanilla |
2 eggs |
1 teaspoon baking soda |
1 tablespoon baking powder |
1 teaspoon salt |
2 cups flour |
Directions:
1. Preheat oven to 350 degrees F. Place bananas in a large bowl and mash with electric mixer. Stir in sugar and let stand 15 minutes. 2. Add applesauce and eggs and beat well. Add remaining ingredients and mix thoroughly. Pour into a 9 x5 loaf pan coated with non-stick vegetable spray. Bake for 45 minutes, or until toothpick inserted in the center of the loaf comes out clean. Remove from oven and let stand 10 minutes before removing from pan. |
