Just a thought I had. I should try it out. Cranberries and down are actually optional, but it doesn't hurt to know the calories. Ingredients:
2 cups flour |
1 teaspoon baking soda |
1/4 teaspoon salt |
1/2 cup applesauce |
1/2 cup brown sugar |
2 large eggs, beaten |
2 1/3 cups bananas (ripe to the point of black) |
1/4 cup dried cranberries (chopped) |
1/4 cup dried blueberries (chopped) |
1/4 cup shredded coconut |
2 teaspoons vanilla |
1/2 teaspoon cinnamon |
1/4 cup flax seed |
Directions:
1. Preheat oven 350°F. 2. Grease pan. 3. Mix all the dry ingredients in a big bowl. 4. In another bowl mix together apple sauce and brown sugar till in makes a sloppy-ish paste. 5. Mash in bananas in the dry ingredients. 6. Put in apple sauce/brown sugar mix. 7. Make sure everything in the bowl in really well blended. 8. Pour it all in the loaf pan. 9. Bake bread for 1 hour. 10. Take out and let sit for 20 minutes. |
