Applesauce Banana Bluberry Loaves |

Being snowed in, I decided to do some baking using leftovers. I just mixed in stuff I wanted to use with a basic 1 2 3 quickbread/cake recipe. The results :a moist, flavorful loaf. Yes, I use non standard mixing preparation but it works for me all the time I also don't care for cinnamon and similar spices in such recipes . Read more .I usually opt for the vanilla or lemon flavors. Works well for me! Ingredients:

2cups applesauce |
2 rips bananas mashed |
1 pint blueberries frozen or fresh |
bowl 2 |
3 cups flour |
2 cups sugar |
1 tsp baking powder |
1 tsp baking soda |
good pinch salt |
bowl 3 |
3 eggs |
1 cup oil |
2 tbs vanilla |
Directions:
1. Bowl 1: 2. beat the bananas into the applesauce until well blended 3. Stir in the blueberries ( iuse frozen I saved in the freezer ) 4. Bowl 2: 5. sift all into a bowl 6. Bowl three: 7. Whisk the eggs, oil and vanilla 8. Pour applesauce mixture and egg mixture into the flour mixture 9. Combine at med speed a minute or two until well blended 10. Divide batter into two greased and floured loaf pans 11. Bake 350F about 70 minutes or tested done in center with toothpick 12. remove to rack to cool 13. After 10 to 15 minutes, carefully remove loaves from pans to cooling rack. 14. Cool completely 15. Wrap in foil overnight to mellow flavors 16. Freezes well 17. Great as is is or with cream cheese spread |
