Applesauce and Cinnamon cupcakes by Fergal Connolly (500 Cupcakes) Ingredients:
1/2 cup sweet butter, softened |
1/2 cup sugar, plus |
1 tablespoon sugar |
1 cup self rising flour |
2 eggs |
3/4 cup unsweetened applesauce |
3/4 teaspoon cinnamon |
3 1/2 ounces chopped pecans |
3 1/2 ounces golden raisins |
1 red delicious apple, thinly sliced |
2 tablespoons granulated sugar |
Directions:
1. Preheat oven to 350 degrees F. Grease a 12 cup muffin pan. Place butter, sugar, flour and egg in a bowl and beat with an electric mixer until smooth and pale, about 2 to 3 minutes. Stir in applesauce, cinnamon, pecans, and raisins. 2. Spoon batter into cups, lay apple slices on top and sprinkle with sugar. 3. Bake for 25 minutes, remove from oven and let sit for 5 minutes, then remove from pan and let cool on wire rack. Serve warm. |
