Although this recipe has been slightly tweaked, the original was found in the Fix-It and Forget-It: Our Best Slow-Cooker Recipes 2009 cookbook. Cooking time is based on the crock pot's high setting. Ingredients:
6 granny smith apples, peeled & slices |
6 large sweet potatoes, unpeeled, thinly sliced |
1 tablespoon fresh lemon juice |
1/4 cup apple juice |
1 tablespoon unsalted butter, melted |
Directions:
1. In a greased 5-quart crock pot, toss the apples & yams in the lemon juice. 2. In a 1-cup measuring container, combine the apple juice & butter, then pour this over the apples & yams. 3. Cover & cook on high for 4 hours (or on low for 6 hours). |
