Applebees Tequila Lime Chicken Copycat Recipe |

This is almost indentical to Applebee's Tequila LIme Chicken. LOVE it. We ate there for the first time in a year or so the other nite, and they had new menus - it's Fiesta Lime Chicken now, but, the same thing. Read more . Serve with spanish rice and pico de gallo. Recipe says to marinate overnight. In a pinch, I have seasoned and seared the chicken, then poured the marinade in the pan, covered it, and cooked on the stove that way, and it turns out great! Ingredients:
2 (5 ounce) boneless skinless chicken breast |
1 cup lime juice (i use fresh squeezed) |
1 t chopped garlic |
seasoned salt |
garlic pepper |
cumin |
1/2 cup tequila (non-alcoholic may be used) |
1 cup tortilla chips |
1/2 cup mexi-ranch dressing (recipe to follow) |
1/2 cup shredded cheddar jack cheese |
to prepare mexi-ranch dressing |
in a small bowl mix |
1 tablespoon salsa |
3 tablespoons ranch dressing |
remove chicken from marinade and grill over medium heat 10 minutes or until thoroughly cooked. |
to assemble: scatter tortilla chips on an oven-safe plate. place chicken on top of tortilla chips. pour mexi-ranch dressing over chicken. cover with the shredded cheddar jack cheese. place chicken under the broiler until cheese is melted. be careful, plate will be hot |
serve with pico de gallo and spanish rice on the side |
Directions:
1. Set oven to broil. 2. To prepare chicken, pour lime juice, garlic and tequila into a sealable plastic bag. 3. Place chicken in bag and chill 4. Marinate chicken overnight. 5. Season chicken with seasoned salt, garlic pepper, and cumin (just a few shakes of each) 6. Remove chicken from marinade and grill over medium heat 10 minutes or until thoroughly cooked. 7. To assemble: Scatter tortilla chips on an oven-safe plate. Place chicken on top of tortilla chips. Pour Mexi-ranch dressing over chicken. Cover with the shredded Cheddar jack cheese. Place chicken under the broiler until cheese is melted. Be careful, plate will be hot! 8. Serve with Pico de Gallo and Spanish rice on the side |
