This is a very good salad, even though it seems like an odd combination. It improves after keeping a day or two in the refrigerator. Ingredients:
3 tbsp. oil, preferably olive |
1 1/2 tsp. lemon juice |
1 tbsp. cider vinegar |
1/2 tsp. dried basil leaves, crumbled |
1/4 tsp. salt |
1/8 tsp. pepper |
1/2 tsp. sugar |
2 medium eating apples, cored and diced ( i used gala apples) |
1/2 medium red onion, cut lengthwise (store remainder in plastic in the refrigerator) |
1 medium green pepper, chopped |
1 medium zucchini, thinly sliced |
2 stalks celery, thinly sliced |
Directions:
1. To make dressing, blend in salad bowl the oil, lemon juice, vinegar basil, salt, pepper and sugar 2. Add apples, onion, green pepper, celery and zucchini. Toss to coat. 3. Cover Chill for 2 to 3 hours to blend flavors. |
