Apple Yogurt Apple Muffins

Yummmy muffins filled with apple flavour.
Ingredients:
2 cups all-purpose flour
or 1 cup all-purpose flour and 1 cup whole wheat flour
1/2 cup granulated sugar
1-1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
1 egg
1 cup vanilla yogurt(regular or lowfat)
1/4 cup lowfat milk
1/4 cup oil
1 tsp. orange zest
2 tbsp. orange juice
1 cup diced apple
1/2 cup golden raisins
Directions:
1. In a large bowl, stir together the flour, sugar, baking powder, baking soda, cinnamon and salt.
2. In a second bowl, mix the egg, yogurt, milk, oil, orange zest and orange juice.
3. Add the wet ingredients to the dry ingredients along with the diced apples and raisins.
4. Do not overmix.
5. Spray two 8 cup muffin tins with vegetable oil spray.
6. Spoon the batter into the tins and bake at 400 degrees for 20 to 24 minutes, until golden brown.
7. Makes 16 muffins.
