Ingredients:
3 1/2 lbs yams or sweet potatoes (about 5 to 6 medium ones) |
1 lb apples, peeled (granny smith or gala) |
4 tbsp apple juice, apple cider or apple brandy |
1/3 cup or more orange juice |
2 tsp cinnamon |
1/4 tsp allspice |
dash of nutmeg |
2 tbsp maple syrup |
1 tbsp light brown sugar |
Directions:
1. Heat oven to 400 degrees. 2. Prick skin of yams or sweet potatoes one or twice. Place on aluminum foil to catch any drips and bake in oven for about 45 minutes or until tender when pierced with a fork. While yams are baking, cut apples into 1/2 inch chunks. Place in saucepan with the apple brandy and simmer until barely tender, about 10 minutes. 3. Remove pan from heat; let apples soak in cooking liquid. 4. When yams are cooked, scoop meat into large bowl and mash to break up big chunks. 5. Add orange juice, cinnamon, nutmeg, allspice, maple syrup and brown sugar. (Can also add 2-3 Tbsp butter) 6. Beat with an electric mixer until smooth and light; you may need to add more orange juice. 7. Drain apples. Fold into yam mixture. Pour into buttered 2 quart microwave safe casserole 8. Note: Can be made 2 to 3 days in advance. Refrigerate until ready to use. Just before serving, microwave until heated through, about 5 minutes. |
