Apple Whole Wheat Muffins

Ingredients:
2 cups whole wheat flour
2 tbs. sugar (or 1/4 c for sweeter taste)
3 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1 1/4 cups water
1/2 cup applesauce
1 apple (about 1.5 cups)
Directions:
1. Combine dry ingredients in large mixing bowl. Combine water and
2. applesauce in another bowl. Add apple to dry ingredients and mix
3. to coat apple. Add water mixture to dry ingredients. Mixture will
4. be somewhat thick. Spoon mixture into non-stick muffin tins sprayed
5. with vegetable oil spray. Bake at 425 deg. F. for about 20 minutes
6. or until lightly browned. Remove from muffin tin.
7. You can replace the cinnamon and apple with 1 1/2 cups blueberries
8. for blueberry muffins.
