Apple Walnut Pecan Bundt Cake |

A dense moist apple cake with plenty of nuts and a lovely glaze topping. One of my favorite Bundt cake recipes. Ingredients:
11/2c vegetable oil |
11/2c granulated sugar |
1/2c brown sugar |
3 eggs |
1t vanilla |
3c all purpose flour |
1t cinnamon |
1tsp baking soda |
3/4tsp nutmeg |
1/2tsp salt |
4c apples, peeled, cored and diced |
3/4c chopped walnuts |
3/4c chopped pecans |
icing |
1/4c butter |
1/4c brown sugar |
1/4c granulated sugar |
1/4c heavy cream |
1tsp vanilla |
Directions:
1. Beat oil and sugars together. Beat in eggs one at a time, then the vanilla. 2. Sift dry ingredients together then stir into batter. 3. Fold in the diced apples and nuts. 4. Pour into a well greased and floured Bundt pan. 5. Bake at 325F for about 60 mins. 6. Cool, remove from pan and place on cooling rack with a tray underneath. 7. ICING 8. Bring all ingredients to a boil, cook until slightly thickened and a dark in color. 9. Cool slightly then spoon over cake. |
