Another recipe from holiday celebrations cookbook. Ingredients:
1/2 cup shortening |
1 cup sugar |
2 eggs |
4 1/2 teaspoons buttermilk |
1 teaspoon vanilla extract |
2 cups all-purpose flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 cup finely chopped unpeeled tart apple |
1/2 cup chopped walnuts |
Directions:
1. In a mixing bowl, cream shortening and sugar. 2. add eggs, one at a time, beating well after each addition. 3. beat in buttermilk and vanilla. 4. combine the flour, baking powder, baking soda and salt. 5. add to creamed mixtures. 6. fold in apple and walnuts. 7. pour into a greased 8 x 4 inch x 2 inch loaf pan. 8. bake at 350 degrees for 55-65 minutes or until a toothpick comes out clean. 9. cool for 10 minutes before removing from pan to a wire rack. |
