An easy wintertime dessert is a variation on an old Russian recipe that traditionally calls for equal amounts of flour, sugar, dried fruits, and nuts, as well as three eggs. 2/3 cup all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
220 g (1 cup packed) light brown sugar |
1 teaspoon vanilla extract |
2 large eggs |
2 cups (diced peeled) apple |
1/2 cup walnuts, coarsely chopped |
1/3 cup raisins |
1 cooking spray |
Directions:
1. Preheat oven to 350°. 2. Lightly spoon flour into dry measuring cups; level with a knife. Sift together flour, baking powder, and salt. Combine sugar, 1 teaspoon vanilla, and eggs in a medium bowl, and beat with a mixer at medium speed until sugar dissolves. Add flour mixture to egg mixture; stir until well blended. Stir in apple, chopped walnuts, and raisins. 3. Spoon batter into an 8-inch square baking dish coated with cooking spray. Bake at 350° for 40 minutes or until golden brown and a wooden pick inserted in center comes out clean. Cut into 9 squares. |
