Tasty, easy-to-make cake. Fun to make with kids after apple picking!! Enjoy with a cup of coffee and maybe even a little scoop of vanilla ice cream. Please, note the use of cake flour in this recipe, not all-purpose flour. Ingredients:
1/2 cup butter (1 stick) |
1/2 cup light brown sugar |
2 medium apples, peeled, cored, and cut into 1/2-inch slices |
2 eggs |
2/3 cup sugar |
1/3 cup apple juice |
1 teaspoon lemon extract |
1 cup cake flour |
1/2 teaspoon baking powder |
Directions:
1. Preheat oven to 350 degrees. 2. Place butter in a 9-inch round cake pan. Heat in oven until melted. Sprinkle in brown sugar. Stir until well moistened. Arrange apple slices in pattern on top of brown sugar-butter mixture. Press apples firmly into mixture. Heat pan in oven until sugar starts to bubble. Set aside. 3. Beat eggs and sugar until light and fluffy. Gradually beat in apple juice and lemon extract. Sift cake flour and baking powder together. Add to mixture, stirring until smooth. Pour batter over apples. 4. Bake 35 to 40 minutes, or until toothpick inserted in center comes out clean. Remove from oven and invert on serving platter. Let the pan STAY over cake for 5 minutes BEFORE removing. |
